Ranchy Stuffed Acorn Squash

The perfect Fall weeknight dinner, and how it's going to give you better skin. 


2 Acorn Squash 

1 bag frozen cauliflower rice

1 lb mild ground Italian sausage

Preferred shredded cheese

1 packet ranch seasoning


Chop both squashes in half and cook on 350 degrees for approximately 20-30 minutes. You will want them cooked through. Once cooked, remove and let cool. 

While cooling, cook sausage fully as well as the cauliflower rice (I love you get a streamable bag for ease).

Once all ingredients are cooked and cooled, add to the bowl and mix, adding ranch seasoning. Save acorn rinds.

Stuff the leftover outside portion of the acorn squash with the mixture and top with cheese.

Put in same 350 degree oven for approximately 15 minutes.
